ORIGIN STORY
Deep in the heart of the Sonoran Desert, where the fire’s glow meets the whispering wind, the legend of Lady Morita was born. For generations, women gathered around smoldering embers, tending to the sacred chilies, their hands carrying the knowledge of fire, smoke, and transformation. This was more than cooking; it was alchemy—a ritual of preservation and flavor, a testament to their lineage. They spoke in hushed tones, passing down their secrets like an incantation, ensuring the spirit of their craft lived on.
Through his culinary adventures across Mexico, Chef JP was drawn into this hidden world. A chance encounter with a revered medicine woman changed everything. Seeing his reverence for tradition and his deep respect for the craft, she entrusted him with a family recipe—one safeguarded for generations, spoken only to those deemed worthy of carrying it forward. In a quiet ceremony by the fire, she revealed the ancient techniques, the precise smoke, the balance of oils, and the deep connection between the land and its flavors. Lady Morita is the result of that trust—a sauce born from tradition, infused with spirit, and crafted with devotion.
The Alchemist Behind the Flame
About the chef
John-Paul Abernathy is the founder and creator of Lady Morita, overseeing all aspects, including recipe and product development, branding, supplier relationships, and daily operations. With a formal classical culinary education from the Culinary Institute of America in Hyde Park, NY, he refined his craft through apprenticeships in Grindelwald, Brittany, Cádiz, and Mexico before returning to California.
His experience includes two and a half years under master chef Hiro Sone at Terra in Saint Helena, where he honed precision, efficiency, and speed in the kitchen. He later deepened his understanding of food and wine pairings in Napa Valley, working at Far Niente winery and cooking privately for Francis Ford Coppola’s family and guests at Rubicon Estate. John-Paul is currently the Estate Chef of Bryant Estate.
